The Southfork Hotel outside Dallas boasts dual green designations for both its lodgings and its restaurant. But don’t expect to trip over people in caftans munching down sprout sandwiches at this mid-range layover in Middle America. The Southfork’s 
clients are mainstream business travelers in khakis. Its banquets attract Little Leaguers and its location off six-lane Central Expressway doesn’t especially shout “green.”
Still, the hotel has spent the last few years doggedly making a series of changes — switching to energy-efficient lights, finding non-toxic cleaners and clamping down on excessive water use and air conditioning – that makes it an exemplar of green values.
These changes are virtually invisible to guests. The Southfork green scene is notable for what you don’t see.
